Homemade Granola (to die for!!)

Sharlene Oborn gave us this recipe. It is simple, easy and so delicious with fresh fruit or chocolate chips! I halved this recipe and added raisins but left out the coconut and brown sugar.

12 c. rolled oats

1 lb sliced almonds

1/2 lb chopped pecans

16 oz coconut 

1 c olive oil

1 c honey

1/3 c brown sugar (opt)

4 tsp vanilla

Mix the first four ingredients in a very large bowl. In a separate bowl, mix the last four ingredients and put in the microwave for 1 min. Stir and pour over oat mixture. Mix thoroughly and divide into two large cookie sheets that have tin foil on them and have been spayed with Pam. Bake for 1 1/2 hours at 250 with both pans in the oven and switch at 45 minutes.

My husband loves this and even has it for dessert on his ice cream. Enjoy!
